In Safari we Rusk
If you’ve stayed with us before, you may well remember our insanely delicious rusks, made all the more magical with the addition of a healthy dousing in 11 o’clock tea or coffee for madly moreish mastication…
Due to popular demand I have convinced and cajoled the kitchen to part with the recipe, but only on the condition that should you try to replicate at home, you remember the scent of woodsmoke in the morning, the feeling of warming chilled hands on a hot cup of coffee and finally that you let us know how they turn out!
Ingredients:
– 500g cake flour
– 4 tsp baking powder
– Pinch of salt
– 100g bran flakes (or similar cereal)
– 100g mixed seeds (i.e. sunflower, pumpkin, linseed etc)
– 100g sultanas /raisins
– 50g sesame seeds
– 50g desiccated coconut
– 200g sugar
– 1 cup plain yoghurt
– 1 large egg (beaten)
– 250g melted margarine/ butter
– 25ml vanilla essence
Method:
– Preheat oven to 170̊ C/ 340̊ F
– Grease baking tray
– Combine all dry ingredients and mix well
– Mix yoghurt, eggs, and melted butter/ margarine
– Add wet ingredients to dry and mix
– Place in baking tray and bake until golden (about 40- 50 mins)
– Remove from oven and cut into bars
– Separate on to two trays
– Reduce oven to 100̊ C
– Place rusks back into oven and allow to dry
Once dry, store in an airtight container – we can’t give you an estimate as to how long they last, as ours are gone barely before they’ve cooled!
